One Great Recipe * Salmon Tacos

almon Tacos, another family favorite of ours, made me a fan of salmon! They're delicious! What really makes them amazing is the sauce. We used to buy the sauce at Cafe Rio (their green salad dressing), but now we've started making it to save money. The recipe we use isn't exactly the same, but it's pretty close. If you don't want to make it from scratch, and save yourself a little time, you can buy it from Cafe Rio or Costa Vida, but I'll include our recipe.

Salmon Tacos

1. prep your fish.
We buy ours frozen. We like it because it has instructions for cooking it frozen.
It only takes about 25 minutes in the oven. I season it with fresh lime juice and citrus grilling seasoning before cooking it.



2. while the fish cooks, start your sauce.



Cilantro Dressing


  • 1 C. Mayo
  • 1 clove of garlic
  • 1/2 bunch cilantro (or more to taste)
  • 2 TBSP balsamic vinegar
  • 1 jalapeno
  • 1 tomatillo (quartered)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • juice of 1/2 a lime
Combine all ingredients in a blender or food processor.





3. cook your tortillas
We found that these taste just like the ones you get at Cafe Rio so we always buy these now and they literally take seconds to cook up.
They're delicious! You could used the precooked kind if you prefer it though.





4. Assemble your tacos.
We put limes, lettuce, cilantro, salmon and the sauce on our tortilla.




It's definitely worth a try!
