One Great Recipe * Corn Chowder

Corn Chowder is one of my favorite fall foods. It's simple warm and comforting. Enjoy!

Corn Chowder
  • 4 Tbsp butter
  • 1 large onion
  • 2 cups fresh cream
  • 4 cups corn fresh, frozen or canned organic & fresh is always best
  • 2 pounds russet potatoes
  • salt & fresh pepper to taste
Chop potatoes with skins on into small chunks. Boil until tender but not mushy. While potatoes are cooking chop onion and saute in butter until onions are transparent. Add corn & cream to onions & potatoes. Salt & pepper to taste. Simmer until flavors are blended and cream thickens a little. Serve with fresh crusty artisan bread and fresh sweet cream butter. Happy Harvest!
